Jan’s Tiramisu

Ingredients:
5 eggs
5 dessertspoons castor sugar
3 tubs 250g Mascapone cream cheese
1x 500g packet savourdi biscuits (lady sponge fingers)
1/3 cup Tia Maria (or other coffee liqueur)
9 espresso cups strong coffee
Grated dark chocolate.

Method:
Separate eggs. Beat egg yolks with sugar until light and fluffy. (about 20 minutes).
Gently add the mascapone cream cheese. Refrigerate.
Beat egg whites until stiff.
Fold egg white mixture into mascapone mixture.
Add Tia Maria to coffee.
Dip biscuits in coffee, turn twice.
Layer soaked biscuits in bowl then add mascapone mixture.
Repeat until all gone.
Add grated chocolate on top.
