Austrian Vanilla Crescents

Ingredients:
250g unsalted butter
125g unblanched almonds
300g plain flour
90g caster sugar

Method:
Soften butter to room temperature.
Grind almonds.
Mix together almonds, flour and caster sugar.
Rub in butter to form a dough. Refrigerate for about 15 minutes.
Form the mixture into a roll, cut off sections and shape into crescents.
Place on lightly buttered oven tray and cook in a moderate oven, until lightly tinted.
While still hot roll in caster sugar.
Before serving sprinkle with vanilla sugar (made with icing sugar).

Vanilla Sugar:
Add 1 vanilla bean, cut in 1-inch pieces, to 3 cups of granulated or icing sugar.
Cover and let sit for 2 weeks before using.
Do not remove the beans. Store in an airtight container.
