Chocolate Biscuit Layer Cake
Ingredients:
½ lb unsalted butter
¾ lb chocolate
2 cups icing sugar
5 egg yolks
2 egg whites, beaten
1 cup of milk
1 teaspoon vanilla essence
3 pkts morning coffee biscuits
Green and red cherries, to decorate
Blanched roasted almonds, to decorate
Chocolate sprinkles, to decorate
Method:
To make the Chocolate:
Melt chocolate and butter together, either in a microwave, or in a bowl over a pan of hot water.
Beat egg yolks and icing sugar, until light and fluffy.
Add chocolate and butter mixture.
Mix well.
Fold in beaten egg whites.
Set aside some of this chocolate for decorating - rosettes or to use for piping.
Mix together 1 cup of milk with 1 teaspoon of vanilla essence.
Dip the biscuits in the milk mixture and arrange them into rows, shaping it into a square.
Spread with chocolate mixture.
Repeat with remaining biscuits and chocolate mixture, finishing with chocolate layer, making sure you have sufficient chocolate to cover the top well.
Decorate with piped chocolate rosettes or other piping patterns, green and red cherries, blanched roasted almonds, or chocolate sprinkles.
