Lemon Cake:
Ingredients:
185g SR Flour
125g unsalted butter
2 eggs
3 tablespoonsmilk
185g caster sugar
pinch of salt
grated rind of lemon
one tablespoon lemon juice.
Icing:
4ozs icing sugar
juice of l lemon
Method:
Beat all cake ingredients together for 5 minutes.
Pour into a greased and floured 20cm square tin and bake in a moderate oven for 20 – 25 minutes.
Remove from oven.
Leave cake in tin and pour icing over.
Leave in tin to cool.
For the icing: mix together icing sugar and lemon juice and pour over cake.
