Health Cookies:
Ingredients:
1 cup coconut
125g/4oz unsalted butter
1 cup raw sugar
1 egg, beaten
1 teaspoon almond essence
¾ cup ground almonds
1 cup rolled oats
1 cup self raising wholemeal flour
Method:
Put coconut into shallow pan and stir over heat till light golden brown.
Cream sugar and butter.
Add beaten egg and almond essence. Stir well.
Mix in ground almonds.
Stir in oats, flour and toasted coconut.
When well mixed place spoonfuls on a scone tray, covered with foil.
Bake in moderate oven for 10 minutes.
