Savoiardi Dessert
Ingredients:
1 large can fruit salad
2 tablespoons brandy
1 teaspoon vanilla essence
1 large packet savourdi biscuits
For the custard:
¾ cup custard powder
1 cup sugar
975ml milk
For the topping:
1 small tin of reduced cream
2 tablespoons icing sugar
1 teaspoon vanilla essence
Method:
Drain the fruit salad and reserve the juice.
Add brandy and vanilla essence to the reserved fruit juice.
Dip the biscuits in the juice and place on the base of a deep serving dish.
Pile the fruit salad on top of the biscuits.
Pour over the prepared custard.
When custard has cooled, spread with topping.
Refrigerate
To prepare the custard:
Boil 950ml of milk together with the sugar, until the sugar has dissolved.
Add the custard powder blended with remaining milk.
Continue to boil gently until the custard thickens, stirring constantly.
To prepare the topping: Beat reduced cream until it thickens, add icing sugar and vanilla and continue beating until quite thick.
