Syrup Pikelets
Ingredients:
1 cup self raising flour
Pinch salt
¼ teaspoon bicarbonate of soda
1 tablespoon castor sugar
1 egg
½ cup sour milk (or fresh milk with 1 teaspoon vinegar added)
1 tablespoon golden syrup
2 teaspoons butter
Extra butter for frying
Method:
Sift flour, salt and bicarbonate of soda into a mixing bowl.
Make a well in the centre and add sugar, egg, sour milk and golden syrup which has been melted with 2 teaspoons butter.
Stir mixture, gradually incorporating flour, to make a smooth batter.
Grease a hot griddle or shallow frying pan and drop tablespoonfuls of the batter onto griddle.
Cook until bubbly on top and brown underneath, turn and brown other side.
Serve warm with butter or cold with raspberry jam and whipped cream.
Note: if batter thickens, add a little more milk.
