Fruit and Nut Confection:

Ingredients:
225g shelled whole Brazil nuts
225g shelled whole almonds
225g shelled walnut halves
120g chopped dates
1/3 cup chopped mixed peel
½ cup chopped glace cherries
120g chopped glace pineapple
225g chopped glace apricots
½ cup sultanas
½ cup raisins
¾ cup plain flour
½ level teaspoon baking powder
½ level teaspoon salt
¾ cup sugar
3 eggs, beaten (use 60’s)
1 teaspoon vanilla essence
¼ cup brandy

Method:
Combine Brazil nuts, almonds, walnuts, dates, peel, cherries, pineapple, apricots, sultanas and raisins in a large bowl.
Sift flour with the baking powder and salt and add the sugar.
Add these to the fruits and nuts and mix very thoroughly.
Beat the eggs and add the vanilla and brandy.
Stir into the fruit mixture and blend well.
This is a very stiff mixture.
Grease and line an oblong tin and spoon the mixture into it.
Smooth the top with a spatula and bake in a preheated oven at 135oC for approximately two and a half hours.
When the confection is cooked take it from the oven but leave it in the tin for 10 minutes.
After this loosen the edges with a knife and turn the confection out on to a wire rack.
Remove the paper immediately and leave to cool.
When the cake is cold, wrap it in foil and store in the refrigerator.
The confection is delicious served with coffee, sliced either thickly or thinly, as you desire.
