Rice Pudding

Ingredients:
45g short grain rice
30g sugar
600ml milk
30g unsalted butter
Either ground nutmeg or ground cinnamon
Few drop of vanilla essence (optional)
Evaporated milk (optional)
Single cream (optional)

Method:
Place the rice and sugar in a greased ovenproof dish.
Pour on the milk ( mixed with vanilla essence, if using), top with shavings of butter, and sprinkle with either nutmeg or cinnamon.
Bake in the middle of the oven for 2 hours at 150 degrees C.

Halfway through cooking, give the mixture a good stir.
Once the pudding has finished cooking, you could add ¼ cup either evaporated milk or single cream.

The slow cooking and the evaporated milk/single cream gives it a very creamy consistency.
