Carrots:

Honey Carrots
6 medium carrots
¼ cup Butter
¼ cup Honey

Method:
Wash and peel the carrots.
You can cut the carrots into , thin slices, chunky pieces, cut on the diagonal or julienne strips, depending on your mood.
Steam the carrots using salted water. Steam until just cooked, with still a little crunch.
Melt the butter with the hone and toss the carrots until well coated.

Another alternative, is to boil the carrots in orange juice, then toss them in the butter and honey.

Carrots with butter, brown sugar, lemon juice and mint:
6 medium carrots
¼ cup butter
¼ cup brown sugar
Squeeze of lemon juice
Chopped mint

Method:
Cook as above.
Melt the butter, add the brown sugar and lemon juice and stir until it becomes thick.
Toss the carrots in the caramel, then sprinkle with chopped mint.
