Smoked Salmon and Avodado Log
Avocado Layer
Ingredients:
1 ripe avocado
300ml carton sour cream
2 tablespoons sweet chilli sauce
Salt and pepper, to taste
2 tsps gelatine
1 tblsp lemon juice
Green food colouring, optional
Salmon Layer
Ingredients:
200g smoked salmon
250g tub spreadable cream cheese
300ml tube thickened cream
2 tblsps chopped fresh chives
1 tsp sweet paprika
Salt and pepper, to taste
3 tsps gelatine
2 tblsps lemon juice
Sliced lime, to garnish
Sliced breadstick, to serve
Method:
Grease a 12cm x 22cm medium loaf pan.
Line base and sides with baking paper
To make avocado layer:
Place avocado in a bowl and mash until almost smooth.
Add sour cream, sweet chilli sauce and salt and pepper. Mix well.
Sprinkle gelatine over lemon juice in a small heatproof jug
Stand jug in a pan of simmering water. Stir over heat until dissolved.
Stir ½ cup avocado mixture into warm gelatine mixture and return to remaining avocado mixture
Whisk until combined.
Tint pale green with food colouring, if you prefer.
Pour avocado layer into prepared loaf pan. Smooth top. Refrigerate.
To make salmon layer:
Process salmon in a food processor until smooth
Add cream cheese and cream.
Process until combined
Add chives, paprika and salt and pepper. Process until combined
Sprinkle gelatine over lemon juice in a heatproof jug.
Stand jug in pan of simmering water and stir over heat until dissolved
With motor operating, pour gelatine mixture into food processor with salmon mixture and process until well blended
Pour salmon mixture over avocado layer and smooth top.
Cover and refrigerate overnight
To Serve:
Turn out log onto a serving plate.
Top with cucumber ribbons.
Garnish with lime slices.
Serve with sliced breadstick.
