Sugared Garlic Prawns
Ingredients:
12 green king prawns, whole and unpeeled
3 tablespoons flour
2 garlic cloves
125g butter
1 tablespoon sugar
2 tablespoons salt
Method:
Chop off and discard the part of the head section of the prawns in front of the eyes (the rostrum or beak, and feelers or antennae).
Dust each prawn with flour.
Crush garlic cloves and brown them in the hot butter.
Whilst the butter is still sizzling, cook the prawns very quickly to keep them crisp and dry.
Cook them in two batches.
Combine sugar and salt.
Whilst the first sides of the prawns are cooking, sprinkle the sides facing uppermost with the sugar/salt mixture.
After 1 minute, turn and repeat sprinkling the cooked side with the sugar and salt.
After 1 more minute, turn the prawns one last time.
Allow to cook for another few seconds, then drain on absorbent paper to keep prawns crisp. Garnish with parsley and serve very hot.
