Roast Turkey with Chestnut Stuffing
Ingredients:
1 Turkey
Softened butter
Salt and pepper
1 lemon,halved
Bacon
1 cup chicken stock
1 cup white wine.
Chestnut stuffing
Sausage stuffing
Chestnut Stuffing:
Ingredients:
60g bacon, rinded and chopped
120g fresh white breadcrumbs
1 level teaspoon chopped parsley
30g butter, melted
Grated rind of a lemon
250g chestnut puree
Salt and pepper
1 egg, beaten
Method:
Fry the bacon in its own fat for about 3-5 minutes, until crisp.
Drain and add the rest of the ingredients, binding with the beaten egg.
Sausage Stuffing:
Ingredients:
2 large onion,skinned and chopped
1 kg pork sausage meat
60g butter
4 level teaspoons chopped parsley
2 level teaspoon mixed herbs
60g fresh breadcrumbs
Salt and pepper
Method:
Mix the onion with the sausage meat.
Melt the butter and fry the sausage meat and onion lightly for 2 – 3 minutes, add the rest of the ingredients and mix well.
