Rice Salad

Ingredients:
1 ¼ cup rice
315g (10oz) can corn niblets
2 stickscelery
2 shallots
½ red pepper
1 large carrot
2 oz ham,sliced and cut into small pieces
2 tablespoons chopped parsley
Salt and pepper
Dressing

Method:
Boil rice in salted water until just cooked.
Rinse under cold water. Rinse corn under cold water.Wash, clean slice celery into small pieces.
Slice shallots.
Slice red pepper into small pieces.
Coarsely grate carrot.
Mix rice with corn niblets, celery, shallots, red pepper, grated carrot and parsley.
Pour the dressing over the rice mixture,mix thoroughly and add ham.

Dressing:
½ cup French dressing
1 tablespoon lemon juice
Salt and Pepper to taste
