Rice

Basic Ingredients:
1 cup rice
2 cups water
30g butter
Salt and pepper.
Method:
Boil the water with the butter and add the rice, salt and pepper to taste, bring back to the boil, cover pan and simmer gently for 20 minutes.
OR
Melt the butter, add the rice and toast for a few minutes, add the water, salt and pepper to taste. Bring to the boil, cover pan and simmer for 20 minutes.

Alternatives:
Chicken rice
1 cup rice
2 cups water
30g butter
Salt and pepper to taste
2 stock cubes – chicken or vegetable

Method:
Boil the water with butter and stock cubes.
Add the rice, salt and pepper to taste, bring back to the boil, cover pan and simmer gently for 20 minutes.
OR
Melt the butter, add the rice and toast for a few minutes, add the water, stock cubes, salt and pepper to taste.
Bring to the boil, cover pan and simmer for 20 minutes.

Onion Rice
1 cup rice
2 cups water
30g butter or oil
1 small onion, finely chopped
Salt and pepper to taste.

Method:
Heat the butter or oil, add the onion and cook gently for a few minutes, until it becomes golden brown, add the rice and toast for a few minutes.
Add the water, salt and pepper to taste.
Bring to the boil, cover pan and simmer gently for 20 minutes.

You can add garlic or stock cubes to the above.
