Baked Salmon
Ingredients:
1 whole Salmon
Olive oil
Lemon or lime juice
Fresh dill
Fresh parsley
Spring onions, sliced
Salt and pepper
Butter
Method:
Mix together the olive oil, salt pepper and lemon juice.
Rub this all over the salmon.
Place the fresh dill, parsley and spring onions in the cavity with a few dots of butter.
Wrap the fish in greased foil, put it on a baking sheet and bake in the centre of the oven, set at 150oC/300oF for 30-35 minutes per 500g, or until the flesh is just beginning to show signs of coming away from the bone.
You can cook this in a Weber or a BBQ with a lid.
