Marrow
Ingredients:
6 small, dark green marrows.
1 tablespoon butter
1 tablespoon oil
1 small onion, finely chopped
1 clove of garlic, crushed
Coffee cup cream
Salt and pepper
Dash of cayenne or curry powder
Method:
Place marrows in cold water and bring to the boil.
Cook until they feel soft when pricked with a fork.
Empty out the water, then chop the marrows into rings.
Put the butter and oil into a frying pan, then add marrow rings. Add the onion and garlic and sauté for 4 to 5 minutes, then add the cream, salt, pepper and cayenne or curry powder.
