Papaya Stuffed with Spicy Beef
Ingredients:
1 tbsp olive oil
6 spring onions, finely chopped
1 garlic clove, crushed
275g/10oz best minced beef
1 fresh chilli, seeded and finely chopped
2 tomatoes, skinned, seeded and chopped
2 tablespoons sultanas
75g/3oz roasted cashews, chopped
2 tbsp grated fresh Parmesan cheese
2 papayas, halved and seeded
Salt and pepper to taste
Method:
Preheat the oven to 180 degrees C
Heat the oil in a frying pan and fry the onions and garlic for 5 minutes
Add the minced beef and cook until browned
Stir in the chilli, tomatoes, sultanas and cashews and cook for about 5 minutes or until most of the liquid has evaporated.
Remove from heat and stir in half of the Parmesan.
Season with salt and pepper to taste.
To make the papaya halves lie flat, cut a thin slice from the base of each one.
Fill with the beef, then sprinkle with the remaining Parmesan.
Bake for 10 minutes until golden brown.
Serving Suggestions:
Serve with rice. Yellow rice makes it more Caribbean.
Or serve with a leafy salad.
