Oven Fried Chicken

Ingredients:
Juice of 1 lemon
3-4lb chicken pieces
Seasoned flour ( season with salt and pepper)
2 eggs, beaten
Breadcrumbs, flavoured with grated parmesan cheese, garlic salt, oregano, paprika
250g butter.

Method:
Pour the juice over the chicken pieces and let stand for 10 minutes.
Dry. Shake chicken in a bag containing the seasoned flour.
Dip each piece in the beaten eggs, then dip into the flavoured breadcrumbs.
Melt the butter in an ovenproof dish and add the chicken and bake for 30 to 45 minutes.
Turn the chicken pieces after 30minutes, or baste.
