Green Bean Salad
Ingredients:
450g/1lb green French beans
2 shallots, finely sliced
Honey mustard dressing
Method:
Wash the beans, cut the tops and bottoms off the beans.
Steam the beans, using salted water.
Cook for about 7 minutes, just until the beans
Are cooked, but not too soft.
Place in a deep serving dish, add the shallots and pour enough dressing over the beans while they are still warm to cover them.
Pouring the dressing over the warm beans enhances the flavour.
Honey mustard dressing:
170 ml olive oil
60 ml white wine vinegar
30 ml balsamic vinegar
1 teaspoon mild wholegrain mustard ( Maille A l’Ancienne)
1 clove garlic, crushed
2 teaspoons clear honey (Capillano is good)
1 teaspoon salt
Good shake of course ground pepper
Place all of the ingredients into a screw-topped jar and shake well to blend before serving.
