French Toast

Quick Method:
Ingredients:
2 eggs
2/3
rd cup milk
A few drop of vanilla essence
1 tablespoon sugar (optional)
3 tablespoons unsalted
6 thick slices of day old bread
1 tablespoon cinnamon
1 tablespoon sugar

Method:
Whisk egg, milk and vanilla essence in a large bowl.
Dip bread into mixture.
Melt butter in fry pan and fry the slices until golden brown on both sides.
Sprinkle cinnamon and sugar.
Alternatively serve with maple syrup.

Probably the Authentic Method:
Ingredients:
500ml milk
½ vanilla pod
100g caster sugar
250g stale brioche
2 eggs, beaten with a little caster sugar
100g unsalted butter
Caster sugar for dusting
Cinnamon, optional

Method:
Boil milk with vanilla pod and caster sugar, then leave to cool.
Cut stale brioche into fairly thick slices.
Soak them in the cooled milk, without letting them fall apart, then dip them in the beaten egg and caster sugar.
Heat butter in a frying pan and fry the slices.
When golden on one side, turn them over to cook the other side.
Dust with caster sugar (and cinnamon, if liked)
